Pakora is a popular Indian snack made by coating vegetables in a spiced chickpea flour batter and deep-frying until crispy and golden.

¼ cup each (chopped or grated): carrot, cauliflower, capsicum, french beans, broccoli
-
¼ cup chopped onion
-
½ tsp chopped green chilli
-
½ tsp chopped fresh ginger
Spices
-
A pinch of turmeric
-
A pinch of hing (asafoetida)
-
¼ tsp ajwain (carom seeds)
-
¼ tsp red chilli powder
-
¼ tsp garam masala
-
Salt to taste
Batter
-
½ cup TRS Besan (chickpea flour)
-
¼ cup water (as needed)
For Frying

Oil (for deep frying)
Preparation

Wash and prepare all vegetables. Chop or grate them and place in a mixing bowl.

Add green chilli, ginger, and onion. Mix well.

Add all spices and salt.
-
Add besan and mix. Rest for 2 minutes.

Gradually add water to make a thick, pourable batter.
-
Heat oil in a deep pan (about 4 cm depth) to 180°C.

Drop spoonfuls of batter into the hot oil and fry on medium-high heat until golden brown.

Remove and drain excess oil.
Serving Suggestion
Serve hot with mint chutney, green chutney, ketchup, and sprinkle with chaat masala for extra flavour.
Tip
You can also dip whole vegetable slices (potato, onion rings, zucchini) directly into the batter and fry them the same way.
